The food was cooked and prepared with the help of volunteers from Mead Johnson Nutrition. The menu included zucchini pasta, cucumber salad, roasted potatoes and sweet potatoes. The families loved the food and were surprised vegetables could taste so good!
We learned how to make smoothies using kale, pineapple, mango and apple juice. There were popsicles made from beets, carrots, kale and other vegetables and fruits. Each family received a recipe booklet featuring all the dishes from the garden dinner. Families toured our garden and were encouraged to pick vegetables to take home.
The children played outside after dinner. With the help of our friends at Bright Horizons, they made race cars made from cucumbers and corn and decorated them. There was fun with a parachute game.
The event was a great opportunity for families to come together, have a healthy meal and learn different ways to prepare healthy dishes.
